Nothing says springtime like fresh produce, and it shines in this salad recipe! This salad is visually beautiful, and it tastes delicious. The sweet berries contrast the salty bacon perfectly. Don’t forget to make the simple homemade dressing and top with homemade croutons!

Ingredients
¼ cup Heinen’s extra virgin olive oil
2 Tbsp. Heinen’s Dijon mustard
1 Tbsp. Heinen’s honey
1 Tbsp. apple cider vinegar
Salt
Pepper
4 cups Heinen’s spring mix
½ cup greenhouse grown strawberries
½ cup blueberries
½ cup Nature Fresh cherry tomatoes, halved
5 pieces Heinen’s CARE Certified bacon, cooked and coarsely chopped
3 oz. Heinen's goat cheese
½ loaf Heinen’s artisan bread, cut in cubes
Directions
  1. Combine the olive oil, mustard, honey, apple cider vinegar and a pinch of salt and pepper in a small bowl. Whisk well and set aside.
  2. Preheat the oven to 350℉. Toss the fresh bread cubes with ¼ cup Heinen’s extra virgin olive oil. Spread the bread on a lined baking sheet and bake for 20 minutes, flipping halfway through.
  3. Combine the spring mix, strawberries, blueberries, cherry tomatoes, bacon and goat cheese in a large salad bowl.
  4. Top with croutons, dressing and toss well. Serve and enjoy!
